Red aval (red rice flakes/poha) is made by flattening red rice after suitable processing. Because it is made from red rice, it can retain more of the grain's natural pigments and, depending on processing, some of the bran layer. Red rice varieties contain naturally occurring pigments and other bioactive compounds.
